A la 12e Borne has its origins in Gallo-Roman times. Delme, between Metz and Nancy, was therefore a stopover for the Romans. The François family has been giving visitors the warmest of welcomes for the past three generations. The hotel has fifteen rooms, four of them designed for families, a summer garden, sauna and two restaurants (including the gourmet Atrium). All this has brought the hotel an excellent reputation for good food and hotel accommodation. The countryside in the Saulx area, including Delme Hill which is a listed regional nature reserve because it contains some superb orchids, is best seen on foot or from the mountain bikes provided by the hotel, with a picnic basket or packed lunch. The family welcome is one component in the quality of a holiday here. Homemade products and grandmother’s recipes for pâté, jam etc. fill the breakfast buffet. Cuisine
For Bernard François, tradition does not exclude more contemporary inspiration which pays greater attention to texture and makes use of emulsions. There is, for example, the Dozen Lorraine Snails with a Lautrec Pink Garlic Emulsion and Essence of Parsley, a Fillet of Char from Lacroix-sur-Meuse infused in Pistachio Oil, White Butter Sauce, or a Beetroot and Red Onion Tart.
