This old citadel is unique. In the past it was used to store grain; now it is a haven of peace in the heart of Metz old town with the Arsenal, Knights Templar’s Chapel and Governor’s Palace as its neighbours. Dating from 1559, the citadel is a Historic Monument. The hotel has a private car park and 46 rooms including one suite. They are spacious and fitted to a very high standard, with minimalist lines and restful colour schemes. Decoration, fittings: there’s plenty of choice. In a décor that is a subtle blend of natural objects and contemporary design, the scarlet and black bar with its lounge atmosphere is adjacent to “Le Magasin aux vivres”, a delightful restaurant that enjoys a veil-like transparency. In the kitchen, everything is homemade, from breakfast to the innovative recipes of the chef, Christophe Dufossé, who runs cookery classes on Saturdays based on a particular product. The wine list contains more than one thousand choices.
Cuisine
The chef loves using local produce to create a full range of flavours. A few examples include his Foie Gras Platter, his Gourmet Cassolette, Sea Bass Cooked in a Salt and Algae Crust, a Tagine of Truffle-Flavoured Vegetables etc. At dessert, the intensely-flavoured Chocolate Sphere is a must.
